Hinterland Brewery Celebrates 30 Years

Hinterland Brewery, a fixture in the Wisconsin craft beer industry, is celebrating its 30th anniversary this year. Since its founding in 1995, the brewery has focused on independent beer-making, crafting brews that explore bold flavors and draw on a rich brewing heritage. Hinterland’s approach extends to its kitchen, where the team experiments with creative flavor combinations to deliver distinctive culinary experiences.

Hinterland was founded in 1995 by Bill and Michelle Tressler in an old cheese factory near Green Bay, Wisconsin. Before launching the brewery, Bill worked as an editor for Beer, The Magazine, which sparked his interest in beer-making. As recent college graduates looking for more meaningful work, Bill and Michelle saw an opportunity to create something that people would genuinely enjoy—a craft beer business.

In 1998, Hinterland expanded by converting a former Green Bay meat-packing warehouse into a production facility and a farm-to-table restaurant. In 2017, the brewery relocated to the Green Bay Packers’ Titletown district, directly across from Lambeau Field. Over the years, Hinterland has gained recognition for its innovative beer offerings, including a line of gluten-free beers available nationally and internationally. The brewery has also emphasized its farm-to-table dining experience and commitment to philanthropy.

Reflecting on the milestone, Bill Tressler said, “Thirty years is a hell of a long time to do anything these days. I wouldn’t trade a second of it away for anything though. I’m so thankful to the people of Wisconsin, of Green Bay, for believing in us and trusting in our products and restaurant for all of their celebrations. It’s a little mind-blowing when you see total strangers supporting your business by picking up a 6 pack or patronizing the restaurant. We’re extremely grateful and humbled by the 30 years of support!”

To mark the anniversary, Hinterland will host two special events in May. A seven-course beer dinner featuring chefs from the brewery’s past and present will take place on May 23, followed by an anniversary party and concert on May 24.
